Episode #12: Deanna Segrave-Daly, RD

In this episode, Dr. Joanna Holleran sits down with Deanna Segrave-Daly who is a Registered Dietitian, best-selling cookbook author, and co-owner of Teaspoon Communications.

Deanna discusses her background and the path that led her to becoming an education and community-focused dietitian, rather than working in a hospital/medical setting and the things that influenced her to focus on helping people find joy in food and cooking.

They also discuss the Mediterranean Diet, which includes the story behind what brought her to focus on this specific regional cuisine. We often find that most of what we think about Mediterranean cuisine is derived from Italy, Greece, Spain, and southern France, but there is so much more! There are 22 countries that border the Mediterranean Sea and they all have their own unique culture and influence on food based on the ingredients available to them.

Deanna also provides insights into sustainability in the context of food and cooking, which is the emphasis of her newest book “The Sustainable Mediterranean Diet Cookbook”. This includes concepts that help to fulfill your individual needs without compromising the needs of future generations and touches on aspects including reducing food waste, how to economically source your food, and tips that we can use on an individual basis to prevent negative impacts on our environment.

Deanna provides insights into some of her favorite recipes (from more than 1,000 recipes that she’s created!), tips for mixing vegetables into meat-centered meals, and ways to think about sourcing seafood sustainably.

Deanna has a new and exciting opportunity through her company, Teaspoon of Spice, where she helps to organize trips to various countries along the Mediterranean Sea so you can experience first-hand the culture and food the region has to provide!

You can pre-order her new book (coming out in December, 2022) and check out her other cookbooks available here: https://teaspoonofspice.com/the-sustainable-mediterranean-diet/
